Making more snacks for CNY and these tiny cakes are basically Chinese Madeleines.

  • 5 eggs large
  • 150 g flour
  • 180 g sugar
  • 1/4 tsp baking powder or 3 tsp soda water
  • 1 tsp vanilla paste optional
  • 1 pinch salt


  • Sieve and bake flour in the oven 3-5 mins ( to remove the moisture)
  • Beat the eggs with the mixer
  • Add in the sugar
  • Add in the shifted flour and baking powder
  • Add vanilla paste (optional)
  • Pipe or scoop batter into a cookie mould
  • Bake at 190C for 10-12 minutes
  • Eat with tea or coffee
